I always see quiche recipes that look amazing but I haven't been able to find a vegan recipe with an alternative to eggs that is not tofu. I'm still determined to find one or make my own, I think sweet potatoes would be a good alternative. Although I'm not totally against soy, I've stopped eating it completely but will probably have it every once in a while because I believe in the tremendous benefits of soy if consumed in MODERATION!
Next time I thaw one of the tofu blocks in my freezer, I'm making this!! It would be so good with spinach added to the filling.
